Ingredients:
- 3 cups All purpose flour plus 1 cup for dusting
- 1 teaspoon baking powder
- 1/4 teaspoon rapid rising yeast
- 1 1/4 cup warm water (about 110°F)
- 1/4 cup room temperature fat like vegan butter, ghee or oil
- 1/2 cup oil like sunflower, avocado or vegetable oil
- 1/2 teaspoon sugar (to activate the yeast)
- 1/4 teaspoon salt
Directions:
- Mix flour, baking powder, salt, water, oil - into a dough.
- Let sit for 30 min
- cut and make roti balls.
- Dust with flour - Roll out. Flip.
- Dust again. roll other side
- Dab with oil.
- Cut like a pizza slice. Then roll over itself
- Let sit for 30 min
- Roll out into circle
- Cool on one side, while dabbing with oil
- Flip & repeat
- Pull off heat and immediately clap until flaky.
