SEATTLE —

Roti

Ingredients:

  • 3 cups All purpose flour plus 1 cup for dusting
  • 1 teaspoon baking powder
  • 1/4 teaspoon rapid rising yeast
  • 1 1/4 cup warm water (about 110°F)
  • 1/4 cup room temperature fat like vegan butter, ghee or oil
  • 1/2 cup oil like sunflower, avocado or vegetable oil
  • 1/2 teaspoon sugar (to activate the yeast)
  • 1/4 teaspoon salt

Directions:

  1. Mix flour, baking powder, salt, water, oil - into a dough.
  2. Let sit for 30 min
  3. cut and make roti balls.
  4. Dust with flour - Roll out. Flip.
  5. Dust again. roll other side
  6. Dab with oil.
  7. Cut like a pizza slice. Then roll over itself
  8. Let sit for 30 min
  9. Roll out into circle
  10. Cool on one side, while dabbing with oil
  11. Flip & repeat
  12. Pull off heat and immediately clap until flaky.
  13. Enjoy!
