At Chippy's Fish and Drink Chef Ethan Stowell is trying a new take on the old seafood classic, fish and chips.
"It's been one of the fast foods that's been, people haven't really tackled as far as going a little bit up scale." says Stowell. "The difference between us and the fast food Ivar's, which has their place and I like them and I enjoy them, this is meant to be dealing with fresh product. Most places it's frozen product or pre-battered or it's a boxed product."
You won't find pre-made frozen boxed fish at Chippy's. They only serve the same fresh ingredients they sell in Ethan's other restaurants, like Tavolàta in Belltown, How to Cook a Wolf on Queen Anne, or Staple and Fancy also in Ballard.
"We're doing the exact same portion size and freshness of halibut here or king salmon here as next door at staple and fancy just putting it into a different vehicle."
Fish and Chips isn't the only thing on the menu. There are other items like the Dungeness Crab Louie, the Fried Oyster Sandwich with pickled red onion and bacon, or best seller St Jude Tuna Poke. You can wash it down with cold local beer on tap on with one of their many scotches at the bar.
Ethan knows his fish and chips are a little more pricey, but he's hoping customers will appreciate the quality over the cost.
"You hate to have them expand on their pocket book but fresh product cost so much more than frozen product."
Chippy's Fish and Drink is comfort food on another level.
"It's the best fish and chips in town."
"Chippy's Fish and Drink" is located at 4741 Ballard Ave NW, Seattle WA 98107 and is open from 5PM 7 days a week. They have a happy hour Mon-Fri 5-6PM. Parking is on the street and there are no reservations taken.
