SEATTLE — If you're over the whole "pumpkin spice" thing, it's understandable. But if you can't get enough of the fall flavor chef Makini Howell from Plum Bistro has a recipe to start your day with. She joins us from Makini's Kitchen.
Pumpkin Spice French Toast
INGREDIENTS
- 1 loaf unsliced bread.
- 1 ½ teaspoons vegetable oil, or as needed
- ½ cup oat milk
- ¼ cup canned pumpkin purée
- 9 tablespoons just egg
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ¼ teaspoon pumpkin pie spice
- ¼ cup finely chopped walnuts
- 1 pear or apple
- ½ cup maple syrup divided
- A few knobs of butter
INSTRUCTIONS
Slice day-old bread about n inch and a half thick and set aside. In a mixing bowl add oat milk, pumpkin puree, Just egg, cinnamon, vanilla, pumpkin spice whisk all ingredients together. Using a 9x11 baking pan pour the mixture into the pan and working in batches lay pieces of bread in the mixture, let them set for a minute or so, and flip them ensuring the bread gets soaked and completely coated. Heat a pan with a knob of butter and cook your pear or apples until they just start to caramelize, add in maple syrup reduce the heat and cook for 2 minutes or so just until the fruit is tender, remove from the pan and put in a bowl and set aside.
To make the French toast heat a pan to medium-high and add in oil, working in batches cook your toast until golden brown on both sides about 2-3 minutes per side.
When ready to serve plate and top with caramelized apples or pears and chopped walnuts, butter and maple syrup.
