SEATTLE — Brian Freedman, Wine, Spirits and Food Writer is the author of "CRUSHED: How A Changing Climate Is Altering The Way We Drink."

He shared 3 favorite drinks that taste great and are crafted with real consideration of the land:

  1. Ayala Champagne Brut Majure. Ayala is in the process of converting their vineyards to organic. They've used no herbicides since 2019, and they'll be energy self-sufficient by next year.
  1. Borsao Tres Picos Garnacha Borsao is the leading producer of Garnacha in the northern Spanish region of Campo de Borja. They have 250 acres of certified organic vines, and a deep commitment to managing their environmental impact, including water reclamation, sourcing power from solar panels adjacent to the winery, and continued and increased usage of wind farms along the Moncayo range.
  1. Copalli Organic White Rum. Copalli is built on the understanding that world-class spirits and environmental responsibility are 100% compatible and increasingly necessary. The Copalli Rum distillery and Copal Tree Lodge are surrounded by over 12,000 acres of rainforest that provide a sanctuary for the local fauna and a dense, beautiful home for Southern Belize's incredible flora.
