Have a scenic dinner at the Fisherman's Restaurant & Bar

The restaurant has a new menu for seafood lovers to try.

SEATTLE — The Seattle waterfront is changing majorly but Fisherman's Restaurant & Bar is open for business serving up waterfront views and delicious dishes from their new menu. Chef Nick Novello made it his mission to reduce the food waste the restaurant produces, inspiring an innovative Shrimp Brodo with a broth enriched by some of the 1,500 shrimp shells the restaurant produces in a month. Chef Novello joins New Day Northwest to make his Shrimp Brodo with housemade ricotta dumplings and talk about other tasty treats you can find on the menu.

Shrimp Brodo Stock:

Ingredients:

  • Roasted Shrimp Shells- 5 cups
  • Diced Tomato- 10 cups
  • Clam Nectar- 10 cups
  • Lobster Base- 1 Tbs
  • Water- 16 cups
  • Lime Juice- 2 Tbs
  • Celery Salt- 1 tsp
  • Salt Kosher- 1 Tbs
  • Blackening Seasoning- 1tbs

Directions:

Place all ingredients together, allowing each ingredient to be roasted over the medium heat. Once items have come together in the pot, add your acid, shrimp shells. Puree with the burr stick to knock down the volume of shrimp shells. This will minimize the volume the shrimp shells take up in your stock. Allow to roll boil for 20min, drop heat to medium, and simmer for 2 hours.

Strain out remainder shells, and let cool. This should be like a flavorful stock, not a sauce. If this is thick, add a little water, and check your salt content.

Ricotta Dumplings:

  • Whipped Ricotta- 3cups
  • 2 Egg Yolk 
  • 1 Whole Egg
  • Flour- 1 ¼ cup
  • Kosher Salt- 1 tsp

Knead ingredients together, fully incorporating each ingredient. Allow to rest once kneaded for 15 min prior to rolling dumplings. Roll, Cut, Blanche, Ice before storing in the refrigerator.

Shrimp Brodo:

  • Shrimp Brodo Stock- 3 cups
  • Ricotta Dumplings- 1 cup
  • Thumbelina Carrots- 1/4 cup
  • Young Garbanzo Beans- ¼ cup
  • Romanesco- 1/4 cup
  • 16-20 Shrimp. Skewer 5 Shrimp Grill

Place Sauté pan on medium heat, Sauté till golden brown, add brodo stock.
