SEATTLE — Erik Liedholm joins Amity in the kitchen to shake up two cocktails: The Pegu Club and No Proof Aviation.
Liedholm is the Master Distiller/co-owner of Wildwood Spirits Co. alongside Chef John Howie of the John Howie Restaurant group. Erik’s background is an advanced Sommelier, and he serves as Wine Director for the John Howie Restaurant Group in addition to co-owning Wildwood.
As a collaboration between a Chef and a Sommelier, all Wildwood products are a result of these passions, fused together. Their mission is to distill spirits with the same care and attention as a winemaker producing wine, and a Chef crafting a dish.
They source 90% of the produce used for distilling — from winter wheat and corn to apple and Douglas fir.
The cocktails made on New Day feature two Wildwood products:
“Kur Gin,” is produced with Washington heirloom–variety red winter wheat. Kur has the backbone of classic juniper aromas and flavors is supplemented by the subtle citrus of Seville oranges, as well as Douglas fir and Braeburn apples from Erik’s backyard.
“Ginnocence” –is a non-alcoholic gin that shines with all the classic flavors and aromas of its cousin, Kur gin minus the alcohol. Ginnocence is the only non-alcoholic spirit produced in Washington.
The Pegu Club (Wildwood Admittance):
Ingredients:
- 2 oz. Kur Gin
- ¾ oz. Orange Curacao (preferably Pierre Ferrand)
- ¾ oz. Lime Juice
- Dash of orange bitters
Directions:
Add ingredients into a cocktail shaker full of ice. Shake vigorously for 30 seconds. Pour into a cocktail glass. Garnish with a swath of orange.
No Proof Aviation:
Ingredients:
- 2 oz. Ginnocence
- ¾ oz. Lemmon Juice
- ½ Maraschino cherry juice (preferably Luxardo)
- ¼ oz. Lavender Syrup
