Bangin' Chocolate Cake with Peanut Butter Fluff Frosting
We need "wow" cake in our arsenals. We need a cake that's like, okay, yum! A cake worthy of a birthday or a bar-becue, simple yet INCREDIBLE, a crowd-pleaser. If you like peanut butter and chocolate, you need this cake! If you feel like having fun with it, don't be afraid to chop up a few peanut butter cups to sprinkle on top.
Ingredients:
- 2 cups granulated sugar
- 1¾ cups all-purpose flour
- 1 cup melted butter
- 1 cup buttermilk
- ½ cup cocoa powder
- 4 eggs
- 1 tablespoon baking powder
- 2 teaspoons vanilla extract
- ½ teaspoon kosher salt
- 1 (3-ounce) dark chocolate baking bar, melted
- ½ cup boiling hot water or coffee
PEANUT BUTTER FLUFF FROSTING:
- 1(8-ounce) package cream cheese, softened
- 1 cup of your favorite peanut butter
- 4 tablespoons butter, softened
- 3-4 cups confectioners' sugar
- 1 teaspoon vanilla extract
- 1 pinch salt
- ½ cup roasted salted peanuts, for
- topping
Directions:
- Preheat oven to 350°F. Butter, flour, and then line a 9-by-13-inch baking pan with parchment paper.
- In a large mixing bowl add the sugar, flour, butter, buttermilk, cocoa powder, eggs, baking powder, vanilla, and salt. Gently mix.
- Once it comes together, add the melted chocolate and water or coffee, then mix until smooth, making sure to scrape down the sides of the bowl.
- Pour the batter into the prepared pan.
- Bake roughly 28 to 32 minutes, being careful not to overbake.
- For the frosting, cream the cream cheese, peanut butter, and softened butter together in a mixing bowl just until it turns smooth.
- Scrape down the sides of the bowl, then add the confectioners' sugar, vanilla, and salt. Mix well.
- Once the cake is cool, dollop the peanut butter fluff onto the cake and sprinkle the peanuts on top.
- Serve and enjoy!
