Cavatelli recipe
(makes 4 cups Serves 4-6)
Ingredients:
2 ½ C (418g) OO flour
¾ C (134g) semolina flour.
1 ¼ C (280g) water
Directions:
Mix everything together with a dough hook in a mixer bowl. Mix on medium speed for around 10 minutes until everything is smooth. Let the dough rest for 10 minutes at room temperature. Wrap in plastic and refrigerate until ready to roll out. Roll out to ¼ inch. Cut in ½ inch squares. Roll the squares across the grooved gnocchi board. Either cook immediately or freeze for when you are ready to use.
