SEATTLE — Danielle Kartes' recipe for the Rhubarb Cordial
Makes 4 cocktails
Cordial
Ingredients:
- 2 1/2-3 pounds of rhubarb, stalks trimmed and diced
- 2 cups sugar
- 1 750 ml bottle of gin or vodka
Cocktail
Ingredients:
- 1 cup rhubarb cordial
- 1 750 ml bottle of Prosecco or champagne
- 4-8 sprigs of mint
Directions:
- Place washed chopped rhubarb into a large half-gallon or 2-quart jar with lid or seal.
- Cover with sugar, then pour in the entire bottle of gin or vodka. I chose gin.
- Place the lid on the jar and shake gently to mix the sugar with the liquor. It may take up to 3 days for the sugar to fully dissolve.
- Place the jar in a cool, dark place for 4 weeks, gently shaking the jar every few days to continue mixing.
- When the cordial is finished, strain the rhubarb and discard. Pour the liqueur through a fine sieve to remove any bits or impurities.
- Place into smaller jars or bottles for storage. This is shelf stable, but I store mine in the fridge.
- To make the cocktail, fill 4 8- or 10-ounce glasses with 1/4 cup ice.
- Pour 1/4 cup cordial into each iced glass.
- Fill the rest of the glass with Prosecco or champagne, then garnish with mint. Enjoy!
