Joe Joe Barron's Light Oyster Stew
Ingredients:
- 2 Tablespoons butter (salted is fine)
- 1 whole sweet Walla Walla onion, chopped (or any sweet onion)
- 2 cups skim or fat free milk (or nondairy substitute)
- 1 pint of small oysters (ours were provided by Taylor Shellfish)
- 1 teaspoon Tabasco or hot sauce
- Salt and pepper to taste
Directions:
- Melt butter in a large skillet over medium low heat. Sauté the onions until brown. Slowly pour in the milk, while stirring to avoid curdling.
- Add the oysters and stir until thickened and oysters are done. Do not overcook oysters.
- Add Tabasco or hot sauce. Salt and pepper to taste.
