Joe Joe Barron's Light Oyster Stew is a taste of heaven in every bite

SEATTLE —

Joe Joe Barron's Light Oyster Stew

Ingredients:

  • 2 Tablespoons butter (salted is fine)
  • 1 whole sweet Walla Walla onion, chopped (or any sweet onion)
  • 2 cups skim or fat free milk (or nondairy substitute)
  • 1 pint of small oysters (ours were provided by Taylor Shellfish)
  • 1 teaspoon Tabasco or hot sauce
  • Salt and pepper to taste

Directions:

  • Melt butter in a large skillet over medium low heat. Sauté the onions until brown. Slowly pour in the milk, while stirring to avoid curdling.
  • Add the oysters and stir until thickened and oysters are done. Do not overcook oysters.
  • Add Tabasco or hot sauce. Salt and pepper to taste.
