Grilled Greek Chicken Wraps with Feta Mint Sauce
Ingredients:
For the Chicken
- 1lb (454g) boneless, skinless chicken breasts
- ¼ cup (60ml) olive oil
- 3 tablespoons freshly squeezed lemon juice, about 1 large lemon
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- For the Sauce
- ¾ cup (170g) plain Greek yogurt
- ⅓ cup (76g) crumbled feta cheese
- 1½ tablespoons finely chopped fresh mint
- 2 teaspoons freshly squeezed lemon juice
- Pinch of salt
For Serving
- 4 Greek pitas
- 1 tablespoon olive oil
- ½ teaspoon seasoned salt
- 2 cups (120g) shredded romaine lettuce
- 1 Roma tomato, diced
- ¼ cup (30g) diced red onion
Directions:
- To make the sauce, in a small bowl, combine the yogurt, feta, mint, and lemon juice. Use a spatula to mix well, slightly mashing the feta as you mix. Taste and season with a pinch of salt, if desired. Refrigerate until ready to serve.
- To make the chicken, layer the chicken breasts between two sheets of plastic wrap and use the fl at side of a meat mallet to pound to an even thickness of ½ inch (1.5cm).
- In a large glass bowl or zipper-lock freezer bag, combine the chicken, oil, lemon juice, garlic, oregano, salt, and pepper. Refrigerate for at least 30 minutes or up to 4 hours.
- Preheat the grill to medium-high heat. Place the chicken on the grill and cook for 6 to 8 minutes per side or until cooked through and the chicken reaches an internal temperature of 165°F (74°C). Transfer to a plate to rest for 5 minutes.
- To serve, brush the pitas with 1 tablespoon olive oil and sprinkle with seasoned salt. Turn the grill down to medium heat. Add the pitas and warm for 1 minute per side.
- Slice the chicken into ½-inch (1.5cm) slices.
- Fill each warmed pita with chicken, lettuce, tomatoes, and onion and top with feta mint sauce.
TO PREPARE IN AN AIR FRYER
To cook the chicken in an air fryer, prepare the chicken as directed in step 2. Preheat an air fryer to 400°F (200°C) and cook in a single layer for 8 to 10 minutes or until the chicken reaches an internal temperature of 165°F (74°C). There is no need to flip the chicken over.
