Pumpkin Patch Cookies

This adorable cookie will make a perfect dessert at any Halloween or autumnal party. Catalina Eddie's serves these with frosting "grass" and vines and candy pumpkins on each cookie, but you can let your imagination run wild. Browse the baking section of your local grocery store during the fall months and look for fun decorations, like sugar tombstones or candy eyeballs. Let the kids create their own spooky scenes!

MAKES 12 COOKIES

Ingredients:

  • FOR COOKIES
  • 1/2 cup salted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

FOR FROSTING

  • 11⁄2 cup salted butter, softened
  • 3 cups confectioners' sugar
  • 1 teaspoon pumpkin pie spice tablespoons heavy whipping cream

FOR ASSEMBLY

  • 12 tablespoons green piping frosting
  • 36 candy pumpkins

Directions:

1. To make Cookies: Preheat oven to 375°F. Line a full-sized baking sheet with parchment paper and set aside.

2. In bowl of a stand mixer fitted with paddle attachment, cream together butter and sugars on medium speed 2 minutes or until soft. Continue to mix on low, and add in egg, vanilla extract, flour, cream of tartar, baking soda, pumpkin pie spice, and salt. Mix 2 minutes more or until combined.

3. Use a 2-3-tablespoon cookie scoop to scoop 12 mounds of dough onto prepared baking sheet. Bake 10-12 minutes until browned and cooked through. Remove from oven and allow to cool on baking sheet completely, about 30 minutes.

4. To make Frosting: In clean bowl of a stand mixer fitted with paddle attachment, cream butter until smooth, about 2 minutes. Add sugar, pumpkin pie spice, and whipping cream until smooth and combined. Once Cookies are

cooled, frost each with Frosting.

5. To Assemble: Use green frosting fitted with a grass piping tip to make "grass" patches on top of Frosting. Fit green frosting with a small round tip and pipe vines around "grass" patches. Add 3 candy pumpkins to each Cookie next to "grass" patches and vines and serve. Leftovers can be refrigerated in an airtight container up to 4 days.
