Scallop sliders make for an elevated and delicious Valentine's Day meal

SEATTLE —

Wild Alaska Weathervane Scallop Sliders

Ingredients:

  • 3 Alaska Weathervane Scallops (10/20 size)
  • 3 slices of rosemary baguette or other hearty bread
  • Duke’s Ready Anytime Seasoning
  • 1 Tablespoon extra virgin olive oil
  • ¼ Avocado, Sliced thin
  • 1 Tablespoon Sinful Citrus Vinaigrette (recipe to follow)
  • 2 Tablespoons Dukecumber Pico de Gallo (recipe to follow)

Directions:

  • Prepare the crostini by cutting ¼ thick slices of the baguette. In a sauté pan over medium heat, add in half of the olive oil and cook each side of the slices of bread until golden brown. Remove from heat and set aside.
  • Season the Scallops with Duke’s Ready Anytime Seasoning.
  • In a sauté pan over medium-high heat, add in the remaining olive oil. Once the oil I hot, sear each side of the scallop until caramelized (1-1.5 minutes per side)
  • To assemble, place the crostini down on a plate, top with slices of avocado, drizzle with Sinful citrus Vinaigrette, spoon on some of the Dukecumber Pico de Gallo and top with the seared scallop.
  • Enjoy!


Sinful Citrus Vinaigrette

  • 1 Egg
  • 2 Tablespoons fresh Garlic Cloves
  • 2 Tablespoons fresh Basil Leaves
  • ¾ teaspoon Kosher salt
  • 1.4 teaspoons fresh Cracked Black Pepper
  • 1 cup + 2 Tablespoons Extra Virgin Olive Oil
  • ½ cup fresh squeezed Lemon juice

 

Directions:

  • Place egg in a food processor and blend for 2 minutes until frothy. Add in the garlic, basil, salt, pepper, and blend until smooth. With the processor still on, slowly add in the oil in a steady stream to combine. Once all the oil is added add in the lemon juice and mix until smooth. Check seasoning. This dressing can be made a couple days ahead of time and stored in the refrigerator.

Dukecumber Pico de Gallo

Ingredients:

  • 1 cup ripe Tomatoes, diced small
  • ¼ cup Green Onion, diced small
  • 1 cup Cucumber, peeled, seeds removed and diced small
  • ½ teaspoon Crushed Red Pepper Flakes
  • Juice of 1 Lemon
  • ½ teaspoon Kosher Salt
  • ¼ bunch Cilantro, chopped

Instructions

  • Mix all the ingredients well and refrigerate.
