This mushroom frittata is a popular dish at Tibbitts @ Fern Hill. #newdaynw

SEATTLE — Yelp’s Top 100 Places to Brunch in the U.S. for 2024 list’s Tibbitts @ Fern Hill in Tacoma #52 on the list.

Chef and Owner Shawn Tibbetts joined New Day Northwest to cook one of their local favorites, mushroom frittata. 

Shawn’s Mushroom Frittata 

Ingredients & Prep:

  • Mushroom Variety - 1 cup, cut in half
  • Baby Bell Peppers, 3, cut in half
  • Red Onions Julienne, 1/2 Cup
  • Whole Roasted Garlic cloves, 6 each
  • 12 eggs
  • Yukon Gold potatoes, small size, 3 each
  • Pepperjack cheese, 1/4 cup
  • Marsala wine, 1/2 cup
  • Heavy cream, 1 cup
  • Vegetable stock, 1/4 cup
  • Fresh Thyme, 2 sprigs
  • Brown Sugar, 1 Tbsp
  • Spinach for Color
  • Local Honey Drizzle
  • Ksp To taste
  • Parmesan, 1/2 cup
  • Lemon Zest
  • Chives to Garnish
  • Olive oil, 2 Tbsp

Cooking Instructions 

  • Prep potatoes by boiling in water for 10 minutes
  • Heat up 10 inch Teflon or nonstick Skillet with 2 Tbsp Olive oil
  • When hot add Mushrooms and brown sugar, to sear mushrooms until brown sugar has dissolved
  • Add Peppers and continue browning
  • Add red onions and add pre-cooked Yukon Gold potatoes
  • Once all ingredients have browned, take off heat and add Marsala wine to deglaze the pan, then quickly put the pan back on heat source and let the marsala reduce.
  • Once reduced add 12 eggs and turn heat down then tilt pan upwards and with a high heat spatula, start pushing the cooked eggs up while the liquid forms around.
  • Once all is formed into the shape of the pan, add pepperjack, salt and pepper and spinach
  • Flip over the omelet for 2 seconds then flip back
    • You could also turn oven on 350 and place in oven after you add your eggs
  • Top with lemon thyme cream, honey drizzle, chives and lemon zest enjoy!

Sauce:

  • In a large sauce pan add 1 cup of vegetable stock, 1 cup heavy cream, and fresh thyme leaves
  • Wait until it's almost at a boil then add 1/2 cup parmesan, lemon zest, reduce until it is in the preferred sauce consistency
  • Add salt and pepper to taste
