Tom Collins anyone? Here’s how to make both an alcoholic and non-alcoholic version

SEATTLE — Simple Goodness Sisters mix up a few different drinks ahead of Seattle Cocktail Week which runs through March 10

The Collins:


Ingredients:

  • 2 ounces gin
  • 1 ounce fresh lemon juice
  • 1/2 ounce Simple Goodness Syrups’ Lemon Herb syrup
  • 2-3 ounces club soda
  • Garnish with lemon wheel and an Orasella botanical cherry, speared

The NA version of the Collins:

  • 1 ounce fresh lemon juice
  • 1/2 ounce Simple Goodness Syrups’ Lemon Herb syrup
  • Spoonful of Orasella botanical cherry juice
  • 2-3 ounces club soda
  • Garnish with lemon twist, a sage leaf, and an Orasella botanical cherry, speared

Directions:

  • Add the first three ingredients to a tall Collins glass. Stir. Add ice to fill the glass. Top with club soda. Take a small section of lemon peel and squeeze it to express the lemon oils over the cocktail, drop it in. Garnish. Serve with a straw.

Sparkling Gimlet:

Ingredients:

  • 2 ounces Gin
  • 1/2 ounce Simple Goodness syrups’ Berry Sage syrup, or syrup flavor of your choice
  • 1/2 ounce fresh lime juice
  • 1 ounce club soda or champagne
  • Garnish with an Orasella botanical cherry, dropped in the glass

Directions:

  • Shake first three ingredients over ice, then fine strain into a chilled coupe or martini glass. Drop in a cherry. Top with champagne or club soda.
