SEATTLE — A unique plant-based bakery is now open for business in Fremont.
Lazy Cow Bakery opened this week and owner Lara de la Rosa says she is nervously excited to be operational after planning and preparing during the pandemic.
“I had a lot more time on my hands and became more and more passionate about baking,” De la Rosa said.
She moved to Seattle three years ago and said she wanted to open a vegan bakery to help normalize veganism and make it a part of the social justice framework.
"A lot of people that are social justice-oriented don't know much about veganism," De la Rosa said.
The plant-based model still offers familiar baked goods like croissants, cake, tarts and tiramisu. De la Rosa is Mexican and said she intends to start offering traditional Mexican desserts like Flan and Conchas.
Lazy Cow Bakery is a work in progress and was built to be what De la Rosa calls a socialist model.
“We’ve created a mutual aid organization to funnel profits in the community and where it’s needed most,” De la Rosa said.
La Casa Del Xoloitzcuintle was created with a focus on the Latinx community and will serve as a conduit for distributing funds to community causes.
“We want this to be a community space and for the public to join us for discussions and votes about where the money will go,” De la Rosa said. She points to the “community fridge” as one of the organization's first efforts.
A food pantry is set up in the bakery to offer anyone in need free food and toiletry items. The pantry will expand as the bakery grows. De la Rosa said her goal is for Lazy Cow Bakery to reflect the community's needs and ultimately become a co-op.
Lazy Cow Bakery is open Wednesday through Sunday at 3418 Fremont Avenue North in Seattle.
