If you've been making fruit salad for years or are looking for something new to try for your upcoming summer gathering, Snoqualmie Casino's culinary team has come up with a delicious twist to an old favorite.
Executive Chef Justin Lee's modification includes carbonating the fruit to add an expected fizz and pop to the salad. He places the fruit on a layer of coconut fat -- a sweet, refreshing substitute for the traditional use of whipped topping.
It's a great example of the strategy the culinary team uses when approaching their menus and dishes.
"We love trying new things," says Chef Lee. "Something I really like to empower my team with is creativity and to have fun with it."
Snoqualmie's newest dining option is Vista Prime Steaks & Seafood. The fine dining experience offers unbeatable views of the Snoqualmie Valley while you enjoy your meal and a glass of wine.
One of their latest creations includes a burger that has been entered into the James Beard Foundation's Blended Burger Project, which is working to lower the rate of meat consumption. Made of half meat and half mushrooms, you can enjoy the taste of a burger without some of the guilt.
As far as favorites go, a go-to dish is their Dungeness crab cakes, served daily with lemon aioli, fresh fennel, and honey mustard.
