Bingsu, Korea's coolest dessert is taking hold in Seattle

SEATTLE — Traditional Korean shaved ice is served with a twist at Poke Fresh in the Roosevelt neighborhood.

The owners grew up eating bingsu with their own families.

"It's been fun just explaining it and seeing people get curious,” said general manager Andrew Yi. "I really think it's going to start popping all over the place."

The dessert starts with whole and condensed milk, frozen and shaved into a bowl.

"It actually tastes like ice cream,” Yi said. “It's like a snow-textured ice cream.”

Traditional toppings include fruit, red bean and matcha. But Poke Fresh added some American flavors to the mix – like Oreos and sugary breakfast cereal.

Customers can choose their own flavor combination, and the large size is perfect for sharing with friends or family.

"I haven't seen anyone put cereal with shaved ice before, that's something new,” said 13-year-old Kalen Dziura. “I think it’s really cool."

Yi thinks bingsu will be a surprising experience for most of his customers.

“It's kind of like when I first discovered Dippin' Dots when I was in first grade, and I thought it was the craziest thing in the world,” he said. “"The texture is what really kind of gets people, the fluffiness of it.”

Poke Fresh is located on NE 65th Street and is open 7 days a week.
