From Canlis to the coast

Couple behind new Rising Tide Tavern at Seabrook answered the ocean's call. Sponsored by Grays Harbor County.

Paul Coker and Emily Edeen went from Seattle's Canlis to Seabrook's coast to open their new restaurant Rising Tide. The reason for the move? The ocean called.

"We came out here to visit and fell in love. We were driving back to Seattle and said, 'We're moving to Seabrook, right?'” Paul said.

"Getting to see the ocean every day? It still doesn't feel real to me that it's just right there,” Emily added.

Paul was a Cellar Master at Canlis, and Emily was the third person ever to pass the Canlis sommelier exam and the first woman to do so. She also was a key player on the team behind the Seattle restaurant’s now-famous COVID pivots. The couple opened Rising Tide in September of 2021 and now live on the coast and run their restaurant.

The salty vibe here is real — they source their seafood from the nearby Quinault Nation. Razor clam chowder and a halibut fishwich both have ingredients from local waters. There are burgers and chicken for folks who don’t love seafood, and the vegan locally foraged mushrooms with grits and gravy were flavorful and satisfying.

Rising Tide Tavern just opened in the back of the restaurant, it’s an intimate place with sea-blue walls and flickering candles.

And these two restaurateurs who launched a new adventure by trading the sound of freeways for the sound of waves are happy to feed anyone who has a craving to go coastal.
