Cook once, eat twice: Easy school night dinners

SEATTLE — Back-to-school season is upon us, and that means busy days and evenings full of activities for many families. It can be a struggle to cook each night.

“We all feel this vibe, especially when it’s back to school and you’re in it,” said Safeway chef ambassador Joel Gamoran. “Vacation’s over.”

Quick, easy meal ideas can help you stress less about dinner and easily repurpose ingredients.

You can put cod over O Organics green beans, top it with a soy vinegarette and wrap it in parchment paper. Crimp the sides to make a pouch and cook it in the oven at 350 degrees for 20 minutes.

“It’s no dishes,” Gamoran said. “It’s so healthy to cook like this.”

Once the cod and beans are done cooking, remove them from the pouch and put them over O Organics ready-made white rice. Top with sesame seeds and scallions for a delicious, simple meal.

You can also use the cod to make a pasta salad. Flake the fish into cooked pasta and add a handful of shaved baby spinach, basil, sundried tomatoes and artichokes. Top it with sundried tomato dressing and cheese.
