Loaded Jalapeño Popper Fries will make YOU the winner on game day

SEATTLE — Loaded Jalapeno Popper Fries 

Servings: 4-6 Prep Time: 15 minutes 

Cook Time: 30 minutes 

Ingredients: 

For the Fries: 

  • 2 pounds baking potatoes, each cut into six wedges 
  • 2 tablespoons olive oil 
  • 1/2 teaspoon dried thyme leaves 
  • 1/4 teaspoon ground black pepper 
  • Salt to taste 
  • 1/4 cup shredded Cheddar cheese (optional) 
  • 1/4 cup crumbled queso fresco 
  • 4 slices bacon, cooked and crumbled 
  • 2 tablespoons chopped fresh cilantro 
  • 2 scallions, sliced

For the Jalapeño Crema: 

  • 1 large jalapeño pepper or 2 small jalapeños, ribs and seeds removed, roughly chopped 
  • 1 avocado 
  • 1 cup fresh cilantro leaves 
  • 1 clove garlic, peeled and roughly chopped 
  • 3 tablespoons mayo 
  • 2 tablespoons extra virgin olive oil 
  • Juice of 1/2 lime 
  • 1/3 cup water (add more if needed for consistency) 
  • 1/2 teaspoon each salt and black pepper (plus more to taste)

Instructions: 

1. Make the Fries: 

Preheat your oven to 450°F (230°C). Arrange the potato wedges on a baking sheet and drizzle with olive oil. Season with thyme, pepper, and salt. Toss the wedges to coat them evenly. Roast the potato wedges for 15 minutes, then flip them over and continue roasting for another 15 minutes, or until they are golden brown and soft in the center. 

Once roasted, sprinkle the wedges with the shredded Cheddar cheese (if using) while they're still hot, so it melts slightly. 

1. Prepare the Jalapeño Crema: 

In a small food processor or high-speed blender, combine the jalapeño, avocado, cilantro, garlic, mayo, olive oil, lime juice, water, salt, and pepper. Blend the mixture for 30-60 seconds until it's smooth and creamy. If you prefer a thinner consistency, add a splash of water to make it more drizzle-able. Taste and adjust the seasoning with additional salt and pepper if needed.

2. Assemble the Loaded Fries: 

Transfer the roasted potato wedges to a serving platter. 

Top with crumbled queso fresco, crumbled bacon, chopped cilantro, and sliced scallions. 

3. Serve: 

Serve the loaded fries with the jalapeño crema on the side for dipping
