SEATTLE — Sweetgreen is now serving customers fresh salads, bowls and protein plates in South Lake Union. Chad Brauze, head of culinary for Sweetgreen, says the company specializes in good, clean food.
“We got a lot of requests to come to this city,” he said. “We came here, and our most popular plate has been the Hot Honey Plate.”
The sauce for the Hot Honey Chicken plate consists of Dijon mustard, honey, cider vinegar, water, sea salt, black pepper, red pepper and avocado oil blended together to make an emulsified dressing.
“This has been emulsified into one good creamy sauce,” Brauze said. “It’s all bound together with the honey and Dijon.”
Sweetgreen introduced the new protein plates category last year. In addition to the sauce, the Hot Honey Chicken plate offers a portion of juicy, herb-roasted chicken, accompanied by a double serving of herbed quinoa, warm roasted sweet potatoes and veggie slaw, topped with crispy onions.
In addition to its new South Lake Union store, Sweetgreen has a location in Kirkland with a store in Capitol Hill coming soon.
“We specialize in better for you, healthy food,” Brauze said. “We try to source it as sustainably and regenerative as we can.”
Each location has a source board that lists where products in your meal come from, like local bread and tofu. You can choose from salads, grain bowls, protein bowls, kids’ meals and sides.
“We have this new motto,” Brauze said. “It’s ‘you don’t have to be a salad person to be a Sweetgreen person.’”
